When my daughter and I were passing through Denver on our road trip last month, we had to stop in at Tocabe American Indian Eatery. I have been there before (here's my review with pictures) and I knew she would love it. It's set up a lot like a Chipotle with a "build your own" type of service line. But instead of a burrito, you're assembling a meal which you might never had tried before.







The base of your meal is fry bread. Then you pick the kind of meat (beef, chicken, or bison). Top it off with one of their salsas (made from hominy or sweet corn) and some veggies, and you've got a healthy meal that tastes great. The ingredients are fresh and unique. I had the chicken and my daughter had the shredded bison, and both were delicious.


We had a cup of the green chile stew. I remembered this from my first visit, and it was just as good as the last time I tried it.

The fry bread nuggets are a lot like the beignets you get in New Orleans, except they are bite-sized and the powdered sugar covers them completely. They have a little more flavor, too. We both thought these tasted great.



And the fry bread nuggets are even better when dipped in wojapi sauce which is made from blueberries and is the perfect dip for the fry bread nuggets. It's very sweet and you can taste how fresh it is.
