I'm halfway home from Denver and stopped in Salt Lake City for dinner. A quick look on Happy Cow sent me over to Frisch Compassionate Eatery which serves an all vegan, plant-based healthy menu.


I tried the Froh which is their smothered verde burrito (brown rice, pinto beans, chick'n, and vegan sour cream) with grilled peppers and onions. It's served along with chips and salsa. Excellent!


The super helpful person at the counter suggested the blueberry Palmer and it was just the thing for a hot afternoon in Salt Lake City.

My plan was to walk from the light rail over to a taco joint recommended to me and check out their tofu taco. But as it turned out, I arrived for the Sunday brunch which serves a different menu. I ended up with the chilaquiles which were very good and I'll return later to check out those tofu tacos.

Cochino Taco has a lively brunch. Plenty of patio seating and a nice menu of drinks. Why did I skip that Bloody Mary??

It can be a little tricky to find vegetarian food on a midwest road trip, so I was glad to discover NOTO Burrito in Topeka which serves a tofu burrito with black beans and cilantro rice along with sour cream and a triple cheese blend.

Usually a "vegetarian Mexican burrito" is simply a bean burrito, but NOTO is serving a legit meal here. The tofu blends with the black beans and rice to make a big, hearty, and delicious burrito.


There's a salsa bar where you can find homemade salsas including jalapeno pineapple. You can taste how fresh they are. Am I really in Kansas??

You can also get coffee at NOTO Burrito. Sort of reminds me of the burritos and donuts combo at Bo Sa Donuts in Las Cruces.

Oh, and NOTO Burritos serves meat, too, so be sure to bring along your non-vegetarian friends.

Torchys Tacos started in a food trailer in Austin selling street tacos and is now throughout the southwest, and I stopped in at the location in Amarillo. 

I was eager to try a couple of Torchys vegetarian tacos. How it works is you order at the register, then grab a number and take a seat. Your tacos are brought to your table and you can pick extra salsas. Get your tacos on either flour or corn tortillas.


The fried avocado taco has, well, fried avocado. I had mine on a corn tortilla. It comes with vegetarian refried beans, pico de gallo, lettuce and cheese. It comes with poblano sauce but you can get a different salsa if you want. This was really good.  


I also had the Independent which is battered & fried portobello mushrooms with black beans (my favorite!), roasted corn, queso, and some avocado. I had mine on a flour tortilla. This was delicious. 

I enjoyed an order of green chile queso with chips before the arrival of the tacos.
Cheesy, spicy, and delicious!



Unique vegetarian Mexican food can be hard to find, so be sure to check out Torchys Tacos.

I haven't found too many places that serve Mexican vegan food, so any time that I discover a new place I am excited to try it. Pancho's Vegan Tacos in Las Vegas is one of those places. It's all vegan (with some gluten-free, too) with a large, diverse menu and I had trouble deciding what to try.

Well I had to get at least one taco, right? Since it's called Pancho's Vegan Tacos. You get a choice of vegan meat, and I picked al pastor. Nice presentation, fresh toppings, and the al pastor tasted grilled and delicious. Not spicy, but it's served with a cup of salsa. The tortillas are fresh and tasty, too.

I arrived in time to enjoy breakfast (served until 12:30) so I also got the vegan chorizo scramble. It was served wrapped in a tortilla like a breakfast burrito, and it was excellent. I prefer vegan chorizo to the real deal because it's not greasy, and it never has any gristle. This was simply delicious.

A big menu, fresh food, and it's all vegan -- so check out Pancho's Vegan Tacos when you're in Vegas.

Mexican candies aren't exactly candy, but they are sweet and delicious. They are seasoned jalapeno peppers which are roasted over a flame, and served with ranch dressing. These are an excellent appetizer. They are a little spicy, but not too much.

Located in Bremerton, Washington (near Seattle and Tacoma), El Balcon serves a large menu of Salvadorian and Mexican dishes. A friend gave me her copy of Sactown Magazine with an article listing where to find the best restaurants in Sacramento according to the chefs of its best restaurants.
