Stromboli at Four Kegs Sports Pub


I'm a few days into my cross-country trip and spent today in Las Vegas. Where else to eat but a TV foodie joint? I pulled out my books and found Four Kegs Sports Pub. It's off the strip so you'll need a car or take a taxi from the Strip. It's well worth the short drive. When you walk into Four Kegs, the first thing you see is the bar. In fact, it's a little hard to find the food. You need to head to the left to find a small window that opens to the kitchen. Get the attention of one of the cooks and place your order. Then head back to the bar to pay the bartender. Then back to the window to get your grub to go.


There's also a dining room behind the bar if you want to dine in. I arrived a little early for dinner so got mine to go. Which turned out to be a mistake, since I had to smell the delicious food all the way back to the hotel!


The stromboli is simply fantastic. I haven't had stromboli this good since New Jersey. The inside is filled with pepperoni, salami, sausage, and ham. And of course sauce and Mozzarella cheese.

But it's the shell that makes this stromboli special. It's very light and airy, with a very thin and crisp crust. The crust is almost like cheese bread that is fried on a flat grill, so I wonder if this stromboli is finished on the grill after it's been baked in the oven, or else the oven is very hot. UPDATE! The kind folks at Four Kegs explained to me that the stromboli is not fried -- it's just the magic oven they use that gives the stromboli it's crispy crust while keeping the dough airy.

As described by Guy Fieri in his book Diners, Drive-ins and Dives: An All-American Road Trip . . . with Recipes! the dough is let to rise twice, and that must be the key to the fantastic crust on the stromboli.

Can you tell how big it is? This stromboli easily feeds 2 or 3 people.

I had to try the fried cauliflower as it was new to me, and it was delicious. The cauliflower parts are cut into bite-sized pieces, and served along with cheese sauce and ranch for dipping.
