This morning I got to try the huevos rancheros at Mosaic Cafe in Tucson as seen on Throwdown with Bobby Flay. Read my full review with pictures after the break.

Mosaic Cafe is at the edge of Tucson and in the foothills so you can see out over the town from the dining room. The atmosphere is festive, and the staff is very friendly. (Friendly service seems to be the norm in Tucson!)

I really wanted to get the chilaquiles, but I was here to try the huevos rancheros as seen on the show. When I ordered them, I got the feeling that a lot of people order them since it's Mosaic Cafe's signature dish.

They did not disappoint! The two eggs were fried just right, the salsa was tasty and spicy, and the beans were fresh and delicious. The eggs are served over two corn tortillas.

You also get tortillas on the side. I asked for more of the corn tortillas, and was told they are handmade fresh at the restaurant. And they sure tasted like it! They were excellent.

Next time I would like to try their Mexican hot chocolate, and of course the chilaquiles.
