Last month in Albuquerque, I was on the trail of the green chile cheeseburger. This month, I'm looking for vegetarian, vegan, and whole plant options while I'm on the road. They're a little trickier to find than the usual places, but not impossible. And today I landed at a wonderful vegetarian place called Any Hy Quan. An Hy Quan serves all vegetarian (with some vegan choices) in Vietnamese style. I chose the vegetarian stir fry with a side of brown rice. I really enjoyed this. The vegetables were cooked perfectly (crisp and cooked, but not over-cooked). The sauce was tasty without being thick or overwhelming. Some of the veggies included were King oyster mushroom, carrots, zucchini, spinach, celery, and a few others. There was plenty of tofu, too. 

The portion size was very generous, and the prices are fair. I left An Hy Quan full and happy.

There are plenty of other options on the menu at An Hy Quan, including mock meats and vegan soups. The staff is glad to help you navigate the menu based on your tastes and needs. I'm new to the vegetarian and vegan options, so this was a big help for me. Check out An Hy Quan's Facebook page for their full menu.


An Hy Quan also squeezes fresh carrot juice. I added pineapple to mine, and it was fresh, sweet, and delicious.
